Butter chicken, potato, roti, and veggies

  • Scraper and tongs  

Ingredients

  • Chicken thighs  
  • Chutney mango 
  • Coconut cream  
  • Cordial Fruit Cup  
  • Cordial lemon  
  • Frozen Broccoli Florets  
  • Frozen Green Beans  
  • Oil vegetable  
  • Potato white (large)  
  • Roti bread  
  • Simmer sauce butter chicken

Note: the Wombat Valley butter chicken sauce is gluten free, egg free, dairy free, vegan and nut free. 

 

Ingredients (modified diets) 

  • Butter chicken simmer sauce (LFOD, LFR)  
  • Chickpeas (GFVG, VG, VE)  
  • Chicken breast Halal (HL) 
  • Pappadums mini plain GF (GFVG, GDF, GF, LFOD, LFR)  

Steps

 

  1. Get 3 pots of water boiling for the broccoli, potato, and beans.  
  2. Peel and chop up the potato into cubes. Add the potato to the pot of boiling water to cook. 
  3. Turn the BBQ on and heat up some oil. Cut the chicken into small chunks and cook on the BBQ until white all the way through. Cut a few pieces in half to check they are cooked properly. 
  4. Place the cooked chicken in a large pot and add the simmer sauce. Bring to a simmer, then add the coconut cream. Heat through and leave it bubbling away until you’re ready to serve.  
  5. Add the broccoli and beans to the two remaining pots of boiling water and cook as per the instructions on the pack. Carefully drain and set aside until you’re ready to serve. 
  6. Scrape the BBQ clean and lay out to roti to warm it through. Now you’re ready to serve!
