Chicken schnitzel, mash potato and salad

EQUIPMENT

Ingredients

  • Carrot whole  
  • Chicken schnitzel piece  
  • Cordial Fruit Cup
  • Cordial lemon  
  • Cucumber  
  • Dressing balsamic  
  • Fruit lemon  
  • Gravy powder traditional GF
  • Lettuce iceberg whole  
  • Margarine VEGAN  
  • Milk full cream UHT  
  • Potato white (large)  
  • Tomato whole 

Ingredients (modified diets) 

  • Chicken breast piece (GDF, GF, LFOD, LFR)  
  • Chicken schnitzel HALAL (HA)  
  • Milk lactose free UHT (LF, LFOD, LFR)  
  • Milk soy UHT (DF, GFVG, GDF, KO, VG)  
  • Veggie burger cauliflower VEGAN (VE, VG) 

Steps

  1. Get a big pot of water boiling. It can take up to 30 minutes for this step. Peel and chop the potatoes, then carefully add them to the boiling water. 
  2. Get the BBQ nice and hot. Add about a cup of oil and place the schnitzels evenly over the hotplate. They’ll need 5-8 minutes to cook each side. 
  3. Prepare the potato – mash in a large pot, adding marg and milk as you go. Remember to keep some potato aside for any mod diet needs (e.g., lactose free diet needs the lactose free milk). 
  4. Assemble the salad into large salad bowls. Remember to keep some separate for any mod diet needs. Prepare the gravy as per the instructions. Slice the lemons ready for people to add to their plate.
